Vinification Details

Grapes are de-stemmed and we let them macerate for 3-4 hours. Fermentation at 15°-17°C. Musts are blended and wine is bottled with the liqueur de tirage. The bottles are stored in our underground cellars (at a constant temperature of 17°C) where the second fermentation takes place followed by a period of aging in contact with the lees of the yeasts. The wine is stored for a minimum of 9 months, then it is decanted and disgorged. Expedition liqueur is then added. The bottle is capped with a cork closure.

History

Our cavas are born in the vineyard. The winemaker takes advantage of the diversity of the Cava region to make cavas with a unique personality, controlling the entire process, from the grapes being harvested through to the wine being made in the traditional method. This producer is the oldest winery in Spain, dating back to 1551 and were the original creators of Cava back in 1872. They now sell a wide variety of still and sparkling wines from Spain, Argentina and California across the globe.

Regional Information

The grapes used to make Condesa de Flores Brut come from vineyards selected by our Winegrowing and Oenology teams in the Penedés region, with its warm Mediterranean climate. Our winegrowing team works all year round in order to constantly improve crops, monitor ripening, and deciding on the best time to harvest and make sure that the grapes enter our winery in optimum condition.
