Vinification Details

The grapes are harvested mechanically at the beginning of September and some during August. Harvests are early in the morning and depend on the temperature of the season. Crushed, and put into stainless steel vats. Temperature is controlled during fermentation. Skin is removed early in order to get a pale colour for rose. Filtration is then done after fermentation is compl
