Vinification Details

The harvest is carried out by hand, with a rigorous selection of the grape clusters. The grapes are then destemmed and vinified in concrete tanks using indigenous yeasts, in order to preserve the purity of the fruit. Extraction is gentle, through light punch-downs and rack-and-return operations. The wine is then aged for several months in concrete tanks, with around 20% matured in used barrels to bring additional complexity and harmony.
