Preparation and Usage
Peel potatoes and if needed cut into evenly sized pieces. Place in a saucepan and cover with boiling water. Drain serve.
Hob
For mash
Follow the hob instructions. After draining return to a warm hob for 1 minute to dry. Add milk, butter and seasoning according to preference. Mash until creamy smooth and serve.

Tip - Double up and freeze (mash / roast)
Salt and vinegar wedges.
Ingredients
1kg (2lbs) potatoes, cut into thick wedges
1 tbsp. salt
250ml (8fl oz) white wine vinegar
4 tbsp. olive oil
1 tbsp thme leaves, chopped
Method
Preheat the oven to 220°C / Fan 200°C /Gas 7. Put the potatoes in a large saucepan and cover with cold water. Add the salt and most of the vinegar (reserving 1 tbsp.). Bring to the boil over a medium heat,t hem cover and simmer until softened. Drain. Arrange the potatoes in a single layer on a large roasting tray. Spoon over the olive oil, the remaining vinegar, and thyme. Gently turn the potatoes until completely coated in the mixture. Season well. Roast in the oven for 20 minutes or until the potatoes are golden and crisp.
