  • 4 large eggs
  • 150g unsalted butter
  • 300ml double cream

  • 2 x 18-20cm round tins

  • Preparation: 20 mins
  • Bake time: 70-90 mins
  • 1. Preheat the oven to 180°C/fan 160°C/ gas 4. Grease two round tins then line with baking paper. Beat together the butter, flour, sugar & baking powder (bag 1) & 3 eggs until smooth.
  • 2. Divide the batter evenly between the two tins & level off the mixture. Bake for 18-22 mins, or until the cakes are well risen & a knife comes out clean. Leave to cool in the tins for a few mins, then turn out onto a rack, peel off the paper & leave to cool completely.
  • 3. Reduce your oven to 120°C/fan 100°C/ gas 1/2. For the meringues, start by lining your tray with baking paper. Place the egg white into a clean bowl & whisk until soft peaks form. Whilst still whisking, add one tbsp at a time of sugar (bag 2) until the mixture is thick, glossy & the sugar has all dissolved.
  • 4. Place the mixture into the piping bag provided & cut approx 3cm off the end. Pipe onto the baking sheet in 4cm wide peaked swirls. Place the meringues into the oven & reduce the temperature to 110°C/fan 90°C/gas 1/4. Bake for 60-70 mins until they are firm to the touch. Turn off the oven & allow the meringues to cool inside the oven for around 30-45 mins, this helps them remain crisp on the outside & soft in the middle.
  • 5. When everything has cooled you're ready to assemble your cake. Empty the cream into a bowl & whisk until you can form soft peaks, being careful not to over-whip. Using half of the raspberry coulis, drizzle onto the base of both sponges, spreading evenly. Add half of the whipped cream onto one of the sponges & roughly level. On top of the cream, arrange half of the meringues.
  • 6. Take your second sponge & place it raspberry side down, on top of the other sponge. Add the remaining whipped cream and meringues to the top of your cake. Finish by drizzling the remaining raspberry coulis.
