Preparation and Usage
Cooking time: 2 hours 45 minutes. Method: Oven
You will need: 3 eggs and 120g softened unsalted butter, 60ml orange juice or 60ml brandy, 1 deep 20cm cake tin, greaseproof paper
Method:
1. Pre-heat the oven to 140°C /120°C Fan /Gas 1-2. Line the base and sides of the cake tin with greaseproof paper.
2. Place the 2 bags of fruit into a medium bowl and pour over either the orange juice or brandy and leave to stand for 20 minutes.
3. Empty the content of the spice cake mix sachet into a mixing bowl and with a wooden spoon beat through the softened butter until well combined.
4. Add the eggs and mix well.
5. Empty the soaked fruit and any remaining liquid into the bowl and combine all ingredients well.
6. Pour the cake mixture into the prepared tin and place in the oven for 2 hours 45 minutes approximately. Test the cake is cooked by inserting a skewer into the centre of the cake, it should come out clean, if not bake for a further 5-10 minutes until it does.
7. Allow the cake to cool fully before removing from the tin.
8. Remove all greaseproof paper and wrap the cake in new greaseproof paper and then clingfilm. Store in a cool place until required.
