Vinification Details

The grapes were harvested during the cool of the night, then cooled to around 10C to retain the fresh primary fruit aromas and flavours, before being crushed gently using a pneumatic press. The juice was then clarified, then fermented in temperature controlled stainless steel tanks. The wine was allowed to remain on light yeast lees for a period to add creamy, nutty flavours. Some components were fermented on French oak to add depth and a subtle toasty character.
