Preparation and Usage
1. Remove chicken from bag and pull the legs out to open the cavity.
2. Rub softened butter over the skin, then season generously with sea salt and cracked black pepper.
3. Take one lemon and prick it all over, alongside one small bunch of mixed herbs, and place both inside the chicken cavity.
4. Place the chicken in a deep roasting tray, and cook according to the pack instructions.
5. Baste halfway through cooking.
6. Once cooked remove from oven and rest for 15 – 20 minutes before carving.
7. Use the flavoursome juices from the chicken to make the perfect gravy.
