Vinification Details

The Malbec grapes arrive at the winery in the early morning after being mechanically harvested. The grapes are separated from their stems and, after a gentle pressing, the must is transferred with the skins and seeds into stainless steel tanks to begin fermentation. The fermentation lasts for 7 days, at a temperature of 27°C. After fermentation is complete, the wine is transferred to a storage tank and the skins are gently pressed into the same tank by a pneumatic press in order to begin malolactic fermentation, which is intended to stabilize and soften the wine. After malolactic fermentation, the wine undergoes decantation. The wine is then matured with French and American oak for 5 months.

History

Teperberg's vineyards are spread around several growing regions in the Judean Hills, Upper Galilee, Gush Etzion, Ella Valley, Tzora and Deir Rafat, a tributary of the Sansan wadi, all of which were vine growing regions in the Land of Israel in ancient times. The rich soil and climate conditions typical of these areas provide the grapes with their rich, unique flavors. The varied regions and soil types enable the winery to grow each variety in its most suitable terroir, using modern irrigation and state of the art trimming systems. The grapes are harvested at night in chilly temperatures and brought directly to the winery.
