I love cheese and Cathedral is one of my go-to brands when I want to be a little fancy but not full-on fancy (helps when it is on offer). I always go "mature but light" with any cheddar who has the option and have always been happy. Today however I had my first Cathedral in quite a while and I don't know what they've done but honestly it tasted like a bad dairy-free cheese (something I've dabbled with) and I've actually had dairy-free cheeses that were better than this. It was full rubbery, not remotely crumbly, mild flavour, and only vaguely cheesy! This is NOT cheddar AT ALL. I definitely cannot eat this uncooked, which I like to do and is the point of going fancier! Disappointed as I chose this over another brand's similar option which was slightly cheaper and slightly more cheese for your money, purely because this one was Cathedral and Cathedral have never done me wrong(!) Undecided on whether I will purchase other Cathedral products in future.

Bland
I picked this cheese up by accident, intending to buy the full-fat version, but wasn't aware until I got home. I tried it anyway, but was disgusted by its ultra-bland taste and chewy texture, so never again. I wish the manufacturers would produce a better means of distinguishing 'low fat' from 'full fat', because currently it's a tiny blue rectangle - much smaller than in the picture. Why not make the packaging blue, instead of dark red? Incidentally, in response to a previous review, the 'healthiness' of low fat products was exposed long ago as misleading. The fats inherent in cheese are saturated, so are healthy - it's unsaturated fats that are unhealthy.
Used to be 'Lighter', no longer the case.
I weekly consumed Cathedral city mature LIGHTER for many years. It was consistently good. Regrettably, since early 2022, every single package (350 and 500 grams) has been more full-fat rather than lighter. There is a more than a notorious lake of fat when it melts now.
