Preparation and Usage

Remove lamb from packaging and rest at room temperature for 30 minutes before cooking.

Tip: Stud the lamb with garlic and season well for extra flavour.

Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Defrost thoroughly for a minimum of 24 hours in the fridge. Not suitable for cooking from frozen. Follow the preparation guidelines above. Once defrosted use within 24 hours and do not refreeze. Keep refrigerated. Once opened, consume within 1 day and by ‘use by’ date shown.

Oven

Instructions: 190°C/ Fan 170°C/ Gas 5 Place joint in a roasting tin, brush with a little oil and season. Roast in the centre of pre-heated oven for 7 minutes per 100g (medium) or 10 minutes per 100g (well done). During cooking baste occasionally with cooking juices. Remove from oven, cover with foil and rest for 10 minutes before serving. 165°C/ Fan 145°C/ Gas 3 for 4 hrs. For a pulled lamb shoulder, put the shoulder in a roasting tray, season the lamb and add a bit of water or stock to the bottom of the tray. Cover the tray with foil and put in a pre-heated oven.

Oven from frozen

Instructions: Not suitable for cooking from frozen.

Microwave

Instructions: Not suitable for microwave cooking.
