I made a large caramel drip cake for a friends birthday. I slathered on caramel between the layers and topped it with this caramel - clearly I'm no professional but it tasted lovely! I've since used it to fill and top cupcakes too!

Carnation Caramel, is a staple in my baking basket. I can't make Diam bar cheesecake without it and now thanks to Carnation cookbook, I have loads more lovely treats to bake !

I always make sure I have a tin of carnation caramel in my cupboard. Rainey days make great time for family messy fun in the kitchen and this is always handy for millionaires shortbread. It doesn't set but poor over warm homemade shortbread and leave in the fridge for about 20mins then pour melted chocolate over and refrigerate again. You can either cut it up before it sets or use a warm heated knife to cut though the chocolate. The caramel does ooze out a bit but it doesn't matter it tastes amazing.

Featured in the brownie section of Rukmini Iyer's 'The Sweet Roasting Tin' recipe book are Caramel Pecan Brownies. The list of ingredients include 75g of tinned caramel. I use Carnation Caramel but feel that a more generous amount is required, so I doubled the quantity. I've served them many times and have made them to sell at fundraisers and everyone says they're the best ever Brownies. (Gluten free too!)
