Peanut-crusted fish with crunchy slaw

  1. Preheat the oven to gas 4, 180°C, fan 160°C.
  2. Roughly blend the ingredients in step 3 in a food processor.
  3. 2 tbsp peanut butter, 15g coriander, juice of 1 lime, 1 garlic clove, 1 deseeded chilli, 2cm ginger.
  4. Put 265g basa fillets on a baking tray lined with non-stick baking paper.
  5. Divide the peanut butter mix between the fillets and gently spread over to coat the tops.
  6. Bake fish for 12 mins or until cooked through.
  7. Meanwhile, put 320g stir-fry vegetables in a bowl and mix in most of 15g of coriander.
  8. Whisk juice of 1 lime, 1 tbsp soy sauce, 1 tbsp sweet chilli, 1 tbsp rice wine vinegar/lime juice.
  9. Pour over veg and toss. Set aside for 10 mins to soften slightly.
  10. Serve slaw with the basa fillets and remaining coriander.
