Vinification Details

Grapes arriving in the winery are pressed with grape stalk removal and immediately started to the wine-making process in stainless steel tank. After about 4-6 hours the alcohol fermentation occurs, causing the raising of the hat marc inside the tank. The must in full alcoholic fermentation is constantly mixed up with the marc as to have the total extraction of polyphenols. The whole process is made at a controlled temperature of about 25-28 ° c. The fermentation lasts about 12 days. then the skins are gently pressed to completely extract the color. The wine obtained is stored in stainless steel tanks where the malolactic fermentation process takes place. The refinement occurs in stainless steel tanks.
