Charlotte potatoes are long, oval potatoes with pale yellow coloured skin and

light yellow flesh. They have a waxy texture and are a great tasting Salad

potato. These potatoes are uniform in size and shape, and great for a quick and

healthy dish. They are delicious either boiled or steamed. Or try roasting them

in their skins. They are great for making potato salad or simply served as a

side to any meal.

Other Instructions:

Hob ~ for boiled

Place potatoes in saucepan. Add just enough cold water to cover and add salt if
desired. Cover with lid, bring to boil and simmer for 15 - 20 minutes or until
tender. Drain and serve.

Steam ~ for steamed

Place potatoes in a steamer above a pan of boiling water. Cover with lid and
steam for 15 - 20 minutes or until tender. Once cooked stand for 2 minutes
before serving.

Oven ~ for roast potatoes

Fan 180oc / 200oc / Gas 6

Adjust over rack to lowest position. Preheat oven. Pour 2 - 4 tbsp. sunflower
oil into a roasting tin and place in oven. Either use whole or cut the larger
ones in half (adjust cooking times accordingly). Put potatoes into the hot
roasting tin. If halved, place cut side down. Return to the oven and roast for
30 - 40 minutes, turning potatoes occasionally until tender and golden.

Roasted Charlotte Potatoes with Garlic and Thyme - Serves 6
These skin-on roast potatoes are a lighter alternative to traditional roasties.

1kg Charlotte potatoes
2 tbsp olive oil
2 garlic cloves, roughly chopped
4 sprigs thyme, leaves only

Preheat oven to fan 180oc / 200oc / Gas 6. Cook the potatoes in a large pan of
boiling water with lid on for 15 - 18 minutes, or until softened. Add salt if
desired. Drain potatoes and transfer to a roasting tin. Using the back of a
wooden sppon, gently crush the potatoes until slightly flattened. Drizzle the
olive oil over potatoes. Season well and toss with garlic and thyme leaves.
Roast for 20 - 25 minutes or until golden and crispy. Mix it up by substituting
the garlic for lemon zest and the thyme for rosemary.
