The grapes are mechanically harvested ; vinification is without presence of grape skins and control of the temperature of fermentation
It is worthwhile to mention that this area is the cradle of the vine-growing system called “Casarsa” that later has become widespread in Friuli and other Italian regions. The first settlements in the area date back to the Roman age; up to 148 B.C.
The area where the pinot grigio is cultivated, is situated in the middle of the region, area of IGT production. From these alluvial soils, this excellent wine is grown. This area is particularly famous for the "Casarsa method", a typical pruning system which allows a grater exposition to the sunlights.
