Aroma: Fresh red fruit aromas of raspberries and notes of blueberry. Palate: Juicy, refreshing and mineral with a long persistence and smooth character. This fresh, elegant Sparkling Rosé is the perfect aperitif. Food Pairing: It can also be an excellent dinner option for all types of seafood, especially fried fish. With aromas of sweet berries, it is a great accompaniment to desert, leaving a pleasant finish. Drink at temperature of 13-14°C.

Vinification Details

The harvest is from February 26th to March 5th, 2012 with hand-picked after this the Fermentation during 21Days at Temperature 13.5°C.

History

In 1999, Cono Sur inaugurated an annex especially designed for the vinification of Pinot Noir, where ancient Burgundian winemaking traditions blend with the New World's forefront technology

Regional Information

One of the world's southernmost winegrowing regions, the Bio Bio Valley has some of the lowest temperatures during the grape ripening process and is one of the few places in Chile where irrigation is not necessary. High red clay content in the soil produces freshness and impressive minerality characteristics, ideal for aromatic whites such as Pinot Noir, Riesling and Chardonnay
