Vinification Details

All fruit was harvested at optimum temperatures in the cool of the night. Fruit was crushed, the juice pressed immediately and fermented in stainless steel tanks. The free run and pressing fractions were treated separately. The juice was fermented at cool temperatures to preserve the primary fruit characters of all varieties. After fermentation, the wine was clarified. The wine was then blended and stabilised.
