Ingredients:

Icing Sugar, Dried Egg White, Anti-Caking Agent, Tricalcium Phosphate (E341)

Storage:

  • Icing sugar can absorb flavours and odours, so store the closed pack away from strong smelling or flavoured foods.
  • For best before end see back of pack.

Preparation and Usage:

...For a softer icing, add 1 tsp of glycerine after the sugar to prevent the icing becoming brittle.

Recipes:

Royal Icing
Creates a smooth finish for sponge cakes, cupcakes, biscuits and finger buns.

Method
Accurately measure 70ml (4 tbsp) of cold water into a small jug, put half of this into a deep bowl. Carefully add the 500g pack of Royal Icing into the bowl.
Using an electric hand mixer start mixing slowly, then gradually increase to a higher speed, adding the remaining water until you reach your desired consistency (you may not need all of it). Beat for 4-5 minutes. A wooden spoon can be used but you will have to beat for longer. If necessary a few drops of extra water can be added to thin the icing.
When the icing stands in soft peaks it is ready to use. If the icing is too runny add a little Silver Spoon icing sugar to thicken. Apply the icing in a thick layer using a palette knife.
Once applied to the cake, leave the icing to harden overnight in a cool, dry place.
One pack is sufficient to ice a 20cm (8 in) marzipanned round cake.
Store any left over icing in an airtight container.
Lightly beat before use.
