The Pinot Noir grapes are left to macerate for just a few hours before pressing. The timing is critical to obtain the delicate salmon pink colour. Fermentation is carried out at low temperatures so as to retain the young fruit aromas.
Fournier are wine growers making classic Sancerre and Pouilly Fumé in their family winery. The Fournier family estate has grown from five hectares in 1950. The wines can be described as herby, gunflint-smoky, combining appealing aromas with a refreshing crispness.
Situated on the banks of the River Loire to the East of Bourges, the Sancerre vineyards cover an area of around 2350 hectares. Three types of soil predominate in the Sancerre region - clay and limestone white soils, the "Terres Blanches", found in the hills further west - Pebbly limestone soils, known locally as the "Caillottes" and cilicious clay soils underlying the hills further east.
