Gavi White Italian Wine
Produced with Cortese grapes. It's an elegant wine of a pale straw yellow colour with a light green vein. It's got a flowery bouquet with citrous and fresh fruit notes. It's delicate and pleasant with a remarkable freshness.

After the destemming the skin is kept with the juice for 6-8 hours at 4C°-5 C° (Criomaceration) The juice is separated from the skin and the fermentation in steel takes place at a controlled temperature of 19C°-20C°. Selected yeasts are added. The wine is then kept on the lees with regular batonages at a temperature of 12C -13C to avoid the malolactic fermentation
The Ascheri Cellars originated in La Morra: in that area, where a place called “Ascheri” still exists, in the early 19th century the first vines were planted and the first wines produced. A reliable account dating back to that period and concerning the “Ascheri” vine cultivation method (then considered modern for its technical innovations) clearly shows how , since its very beginning, the Ascheri Winery stood out for its commitment and innovative methods.
Rocca Ripalta is a brand name of Ascheri Cellars and is related to the ancient name of RIVALTA, the area in the commune of La Morra where the Ascheri place is. The Gavi area is in the South of Piemont in Alessandria Province.
This wine is ideal for drinking now but can be kept for up to 3 years
