Grapes are picked & the extracted juice is settled by flotation. The clear juice is in stainless steel tank for alcoholic fermentation. The new wine then goes for finning, centrifugation, cold stabilization, filtering. A tank is used for blending & adding the tirage for the second fermentation. It is then bottled & racked, rested for a minimum of 15 months. After this the bottles are put in cages for the automatic remuage until the bottles are ready for the degorgement, topping and final closing
In Spain it would be in the 19th century when several families from Sant Sadurní d'Anoia (Barcelona) started to investigate this new method and technique of making wine, being in 1872 when the first bottles of Cava were made in the traditional method of second fermentation in the bottle
