Preparation Guidelines:

Vanilla sponge mix. Makes 2 x 18cm cakes or 12 cupcakes
Sponge cake.
Ingredients:
2 medium eggs; 90ml (6 tablespoons) water

Method:
1. Pre-heat the oven to 190°C/Fan 170°C /Gas mark 5.
2. Grease and line two deep 18cm sandwich tins.
3. Empty the mix into a bowl and add the eggs and water.
4. Beat with an electric mixer for 2 minutes until smooth.
5. Divide the mixture equally between the two tins and bake in the centre of
the oven for 15-20 minutes or until golden brown.
6. Allow to cool in the tins for 5 minutes before turning out onto a cooling
rack.

Cupcakes.

6. Leave to cool.
