Preparation and Usage:
How to Use Xanthan Gum
Xanthan gum can help to bind gluten free bread and baked goods. If it is not already included in your flour blend, mix 2 teaspoons of xanthan gum with 500g of plain flour for bread, 1/4tsp to 200g plain flour for cakes and a pinch per 100g plain flour for pastry.
All-in-One Gluten Free Loaf
Oven 220°C/Fan 200°C/425°F/Gas 7
500g Plain flour free from gluten
2tsp Xanthan gum
1tsp Quick yeast
500ml Warm water
1. Put the flour, xanthan gum, yeast, sugar and salt into a bowl and mix well.
2. Stir in the warm water and beat well.
3. Fold in the oil.
4. Spoon into an oiled 1kg/2lb bread tin.
5. Smooth the top and leave in a warm place to double in size, about an hour.
6. Bake in a pre-heated oven for 50/55 minutes.
