We might be the remarkable duck people but there's room in our hearts and on our plates for other poultry too. Our spatchcock poussin from our friends the Leon family in Brittany, are a special breed that's naturally slow growing so you get meat that's young and tender yet thoroughly flavourful. With our sea salt and four pepper seasoning it makes for a delicious treat, and because it is "spatchcock" it's really quick and easy to cook too.

Poussin (98%), Sea Salt and Four Pepper Seasoning (2%) (contains Sea Salt, Spices (Green Bell Pepper, Black Pepper, White Pepper, Dried Glucose Syrup, Red Bell Peppers, Vegetable Oil)


  • Keep refrigerated at 0°C to +4°C. Once opened, use within 24 hours.
  • If freezing, do so on the day you buy it and use within 1 month.
  • Defrost it thoroughly in the fridge before cooking. Don't refreeze after thawing, and use within 24 hours.
  • For use by date, see front of pack.

Cooking Guidelines:

Barbecue (From Chilled): Wrap the poussin in kitchen foil, keeping it flat. Cook over a medium heat for 25 minutes, then remove from the foil and cook for 5-10 minutes longer, turning often.
Cooking Instructions (General): 'Spatchcock' means the bird has been cut along the spine and spread flat for fast and even cooking.
This peppered spatchcock poussin is delicious grilled or done on the BBQ.
All ovens vary in performance, this is a guide only.
Grill (From Chilled): If you're grilling, brush with a little oil or melted butter and grill under a medium heat for 30 minutes, turning occasionally. Let it stand for 10 minutes before serving.
Oven cook (From Chilled): 1. Pre-heat oven to 190°C, Fan 170°C, Gas Mark 5.
2. Remove the poussin from the pack and lay it flat, skin-side up, on a baking tray.
3. Cook for 40-45 minutes in the middle of the oven.

Preparation and Usage:

It's remarkably easy to grill or BBQ this poussin.
1 Flatten the bird out.
2 Place skin-side up on a tray.
3 Roast for 40-45 minutes.
