Preparation and Usage:
Geese, it seems, have a sweet bill. Maybe that's why 1/4 of the world's Pink-footed Geese forage for food in East Anglia's sugar beet fields.

Hot Tomato Chutney
2 Medium Onions
2 Garlic Cloves
1 Deseeded Red Chilli
2 Tbsp Olive Oil
175g granulated sugar
2 Tbsp Tomato Puree
2x 395g Can of Cherry Tomatoes
200ml White Wine Vinegar
Peel and finely chop the onions, garlic and chilli.
Heat the oil in a large saucepan, add the onion and cook for 5 minutes. Add the garlic and chilli and cook for 1 minute.
Add the remaining ingredients and heat gently, stirring until the sugar has dissolved. Bring to the boil and simmer for 45-55 minutes. The liquid should reduce and the chutney should be a thick, pulpy consistency.
Spoon into jars and cover at once.
