Vinification Details
Traditional techniques are used with vinification of the grapes taking place over 2-3 days. Fementation starts automatically after a few hours and continues for 24 to 36 hours until stopped by addition of grape brandy. The fortified wine is then transferred to barrel for clarification and ageing.
History
Dow’s is entirely owned and managed by the fourth generation of the Symington family, Port producers since the 19th Century. The family, whose experience dates back over 100 years, has supervised all the vineyards, winemaking and the ageing of this wine. Dow’s owns two of the Douro’s finest Quintas, Senhora da Ribeira and Bomfim. These were acquired in 1890 and 1896, making Dow’s one of the first houses to invest in premium vineyards.
Regional Information
Douro is a Portuguese wine region centered around the Douro River in the Trás-os-Montes e Alto Douro region. It is sometimes referred to as the Alto Douro (upper Douro), as it is located some distance upstream from Porto, sheltered by mountain ranges from coastal influence. It is very hot during the summer reaching temperature in excess of 40 degrees celcius in the summer perfect for the indigenious grape varieties of this region. The region has Portugal's highest wine classification as a Denominação de Origem Controlada (DOC). While the region is associated primarily with Port wine production (fortified wine), the Douro also produces table wine (non-fortified wines).
