For best results always cook from frozen. Remove all packaging. Place a portion on a microwaveable plate and cover. To improve succulence during cooking add one tablespoon of water before covering and cooking. Cook on full power

Name of recipe suggestion Roasted salmon gremolata with roasted Mediterranean
Cooking time: 45 minutes
2 x 100g Salmon fillets skin-on (frozen); Roasted vegetables: 1 red onion; 1/2
sweet potato; 1 courgette; 1/2 aubergine; 1/2 red pepper; 1/2 yellow pepper; 6
baby tomatoes; 2 tbsp olive oil; 2 tbsp mixed herbs (thyme, basil and oregano),
finely chopped; 2 garlic cloves, crushed; 2 tbsp balsamic vinegar; 2 tbsp clear
honey; salt and pepper.
Gremolata: 1 garlic clove; 1 bunch (12g) of flat leaf parsley; grated zest of 1
lemon; juice of 1/2 a lemon; 15g capers; 20g pitted green olives; 2 tbsp olive
oil; salt and pepper.
1. Pre-heat oven to 200C/Fan 180C/Gas Mark 6
2. Cut all vegetables into large bite-size pieces, place in a bowl and combine
with the remaining ingredients, mix well.
3. Place on a lightly oiled baking tray and bake for 20 minutes.
4. Blend all the ingredients listed for gremolata, except the oil, in a food
5. On a slow speed add oil to form a paste.
6. Add salt and pepper to taste.
7. Spread the gremolata over the top of the salmon fillets.
8. Give roasting vegetables a gentle mix and push to the side of the baking
tray leaving room to add the salmon gremolata to the centre of the

Although every care has been taken to remove bones, some may remain.
