Vinification Details

The juice from the grapes undergo a short fermentation to a low alcohol in temperature controlled conditions. The resulting base wines are then blended by the winemaker to achieve the best balance of freshness and fruit character. Following this process the wine is fermented a second time. As the wine is placed under pressure the carbon dioxide gas that is produced as a bi-product of the fermentation is dissolved into the liquid, this is subsequently released as the bubbles that make the wine sparkle. This fermentation is halted before the alcohol level gets too high by a fine filtration which removes the yeast. The sweetness which is indicative of the style of the wine remains as there is sugar left in the liquid which hasn't been converted to alcohol.

History

Italy has a great tradition of lower alcohol sparkling wines such as Asti and Lambrusco. The grape varieties used to make Villa Garducci have a long and rich history in Piedmonte. This wine is produced with today's consumer tastes in mind and offers plenty of ripe fruit.
