2008 International Wine Challenge International Semillon Trophy.

Our 2007 Semillon is made from Semillon grapes grown in the Clare Valley of South Australia, from the vineyards of the Adams, Crawley and Hammond families.

Following crushing, the Semillon juice was left on skins for 12 hours to maximise flavour extraction.

Fermentation was carried out in new French oak hogsheads. Following fermentation the wine remained in oak for 5 months prior to bottling.

The wine exhibits intense tropical fruit characteristics, with added depth from the oak maturation. It is medium bodied and dry, and will continue to improve for at least seven years when cellared with care.

Vinification Details:

Following crushing, the juice was left in contact with its skins for 12 hours to maximize fruit flavour extraction. All pressings juice was retained and has been utilized in this blend. Fermentation was in stainless-steel tanks (27 per cent) and new French oak barrels (73 per cent). About 80 per cent of this blend then remained in oak for five months before back blending with the balance.


Tim Adams Wines was founded in 1985 and has grown from a crush of just 85 tonnes then to around 900 tonnes today winning a string of international awards. It sources its purely Clare fruit via a network of loyal growers and it's own vineyards.
