Description

Semillon - White Australian WineOur 2012 Semillon is made from Semillon grapes grown in the Clare Valley of South Australia, principally from our own vineyards and those of the Crawley family.Following crushing, the Semillon juice was left on skins for 12 hours to maximise flavour extraction.Fermentation was carried out in new French oak hogshead. Following fermentation the wine remained in oak for 6 months prior to bottling.Richness and zesty acidity complement intense grassy, tropical and stone fruit characters, with added depth from oak maturation. Our 2012 Semillon will reward careful cellaring for at least 10 years.Tim AdamsWinemaker

This aromatic wine has grassy and stone fruit citrus flavours, great balance and a mouthfilling finish.

Vinification Details

Following crushing, the juice was left in contact with its skins for 12 hours to maximize fruit flavour extraction. All pressings juice was retained and has been utilized in this blend. Fermentation was in stainless-steel tanks (27 per cent) and new French oak barrels (73 per cent). About 80 per cent of this blend then remained in oak for five months before back blending with the balance.

History

Tim Adams Wines was founded in 1985 and has grown from a crush of just 85 tonnes then to around 900 tonnes today winning a string of international awards. It sources its purely Clare fruit via a network of loyal growers and it's own vineyards.

Lying north of Adelaide, South Australia's Clare Valley has a combination of soils, altitude and climate which make it unique among Australian regions for production of a wide range of wines.
