Vinification Details
The Chenin Blanc grapes for this wine were grown in South Eastern Australia. The fruit was harvested in parcels from late February 2006 through to late March at a range of baumé levels from 11.5° to 13.0°. To retain the grapes' varietal fruit characters the wine received minimal handling, it was picked in the cool of the night and underwent cold fermentation. It was bottled soon after fermentation with an alcohol of 12.5%.
