As their name suggests, these small, kidney shaped beans have a distinctive black 'eye' marking on their cream coloured skin. Blackeye Beans have an earthy flavour which absorbs others well, becoming tender & enlarged during cooking they are particularly suitable for soups and casseroles as well as a variety of salads.
