Description

Dried red split lentils.

Makes a great thickener for soups and stews

Time:25 mins

Instructions:No need to soak. Rinse thoroughly before cooking.
Place 100g of lentils into a large saucepan with 500ml of water.
Place the pan on the medium hob ring over a high heat. Bring to the boil and
boil for 10 minutes.
Reduce the heat to low and simmer for 15 minutes, until the lentils have
softened but are slightly firm to the bite.
Drain thoroughly, rinse and use as required.

Recipes:

Carrot and Coriander Soup

Preparation Time: 15 minutes
Cooking Time: 30 minutes

Ingredients:
1 tsp olive oil
1 medium onion, diced
2 garlic cloves, crushed
1 tsp mild chilli powder
1 vegetable stock cube
1lt water, boiling
125g Tesco Red Split Lentils
500g carrots, chopped
6g fresh coriander

Method:
1. Heat the oil in a large saucepan over a medium heat, add the onion and
garlic. Fry for 2 minutes, then add the chilli powder and fry for 30 seconds.
2. Dissolve the stock cube in the boiling water and stir into the pan with the
onions.
3. Rinse the lentils in plenty of cold water and add to the pan along with the
carrots.
4. Bring the soup to the boil and boil for 10 minutes, stirring frequently.
Cover with a lid, reduce the heat to low and simmer for 15 minutes, continue to
stir frequently.
5. Blend the soup thoroughly in a food processor or liquidizer for 1 minute,
until no chunks of carrot remain. Add the coriander and blend for a further 30
seconds. Serve immediately.

To Serve:
Swirl a little low fat natural yogurt into the centre of the soup before
serving.
