The grapes from 50 contracted growers are hand-picked and pre-sorted in the vineyards, before being transported to the winery to be pressed, the juice being cold stabilised for 24 hours before being transferred to where the alcoholic fermentation takes place. The secondary or malolactic fermentation follows, to soften the total acidity, after which the wine matures, with frequent stirring up of the lees to increase richness and flavour, for 12-16 months depending on the vintage before bottling.
Bertrand Straebler was born in 1963. He became the Winemaker for Labouré-Roi in 1995. “Initially, I modelled my wine by imitating the older, traditional produce. Later, I let my imagination roam, abandoning empirical methods & modelling the vines with the respect they deserve. I always maintained the authentic balance of the landscape & soil. Every year, I work hard to respect what nature entrusts to me & pass on this creative work, to give pleasure to all those who love great Burgundy wines.”
The village of Meursault is at the very center of the Côte de Beaune. With the villages of Puligny Montrachet and Chassagne Montrachet, it represents the best expression of the Chardonnay grape. The soil and the position of the vines are ideal for this grape variety. It is also the land of the Montrachet…the "best white wines in the world".
