In 1551, Jaume Codorníu began making still wines in Penedès, Spain. In 1872, having studied the ‘traditional method' of sparkling wine production in Champagne, Josep Raventós, a descendant of Codorníu, applied the technique to the traditional Penedès grape varieties of Macabeo, Parellada & Xarel.lo and created the first bottle of Cava.
