Sausage meat and smoked bacon koftas

What to do

  • To a hot pan add the olive oil, quickly followed by the onion and gently fry for about 5 minutes or until softened.
  • Remove from the pan and allow to cool. In a separate bowl mix together the sausage meat, lemon zest, breadcrumbs and herbs. Add the cooled onion and the beaten egg and mix well.
  • Lay each rasher of bacon on a board and gently stretch out with a knife to about double its original length.
  • Divide the mix into 12 equal pieces. Press each piece around the skewer to form a sausage shape.
  • Wrap each of these with a rasher of bacon and then either roast with the turkey for 20 minutes, or separately seasoned with cracked black pepper.

  • 2tbsp extra virgin olive oil

  • 425g (14oz) premium sausage meat
  • zest of a lemon
  • 150g (5oz) fresh white breadcrumbs
  • 2tbsp chopped fresh thyme or sage
  • 1 medium free range egg, beaten
  • 12 rashers smoked bacon
  • 12 wooden kebab skewers
