Cranberry sauce with port and honey

What to do

  • Put the cranberries and sugar in a pan, along with the clementine juice and honey. Cook gently for 8-10 minutes until the berries are tender. Taste at this stage and sweeten further if needed.
  • Add the star anise and port. Bring back to the boil and cook for 1-2 minutes, then remove from the heat. Allow to cool a little before stirring in the clementine segments, so that they keep their shape.
  • You can serve straightaway, but this sauce is best made in advance and stored in a sealed container to allow the flavours to mellow together.

  • juice of 4 clementines, plus 2 clementines, peeled and segmented
  • 100g (3½oz) orange flower honey
  • 2 star anise
  • 50ml (2fl oz) port
