  • Soil: Decomposed granite, Hutton and Clovelly soils.

  • Viticulture: Grown as bush vines only - to control yield.
  • Yield: 5 tons/ha. - 3250 lit./ha.
  • Skin Contact: 3 days on the skins in open fermenters at 29°C. - cap punched manually every 2 hours.
  • Irrigation: None - to obtain optimal extraction.
  • Oaking: 16 months in 80% new 225 lit. French oak - 20% 2nd fill.
  • Climate: Dry winter with a hot and dry ripening season.
  • Flavours: Complex red and black fruit flavours. Savoury notes develop after 5 years in bottle.

  • Deep intense plum colour with a purple hue. A bold intensity of black plum, red and black berries and a concentation of vanilla and aromatic sweet spice. This vintage offers a good complexity with layered flavours that are balanced and accessible.

Vinification Details

  • After hand harvesting and sorting, fermentation took place in open concrete fermenters at 28°C. The cap was punched manually every two hours and the juice was drawn off the skins after 3 days. Matured for 16 months in 80% new and 20% second-fill 225L French oak casks.

History

  • Listed as a 'first growth' by Tim Atkin MW, Kanonkop is situated on the lower slopes of the Simonsberg Mountain in Stellenbosch, from where it produces award-winning wines. A fourth generation family estate, it was originally purchased by JW Sauer (a cabinet member in the parliament of the Union of South Africa) and has been in the family ever since.

Regional Information

  • From estate vineyards surrounding Kanonkop, the soil is decomposed granite, Hutton and Clovelly. Vines are grown as bush vines only to control yield, with many up to 63 years old. No irrigation takes place to obtain optimal extraction.
