  • After moderate pressing, the grape must is fined and the juices are then allowed to settle. Fermentation takes place in temperature-controlled tanks. The wines are bottled after maturing for 6-10 months.

History

  • In the early days, Union des Viticulteurs de Chablis, the flagship of the Chablis appellation, was a core of pioneer wine growers. It is now a group of several hundred dynamic owners many of whom have been tending their vines for generations. Between them they cultivate more than 1,000 hectares of wine which makes up a quarter of the Chablis vineyard area.

Regional Information

  • Chablis is near Auxerre in the Yonne département and is one of the northern-most wine growing areas in Burgundy. It has the particular characteristic of only producing white Chardonnay wines with distinctive minerality owing to the kimmeridgian clay slopes. These particular Chardonnay grapes come from 20 year old vines.
