The ‘Nothing wasted’ banana bread

Every week, the community café at Bo’ness Academy in Scotland receives a delivery of unsold food from its local Tesco, through the Community Food Connection programme. They use the ingredients to make wholesome homemade snacks for local residents that visit the on-site café for a bite and a chat. The students create new recipes to share with them – and they help stop food waste, too. It’s win-win!

Birdie’s ‘Everybody welcome’ jerk chicken

For over 40 years, Birdie has opened up her home to more than 800 foster children. So it can be a busy place – especially at dinner time, when she feeds up to 15 people at once! But she loves cooking, and her delicious ‘everybody welcome’ jerk chicken recipe with its Caribbean-inspired marinade is a great dish to welcome new children into the family. It’s easy to tweak the recipe to feed a larger group, too. The only limit is the size of the dining table!

Sal’s ‘surprise me’ cauliflower steaks

When Sal, from our story, met her boyfriend last year, it seemed they were the perfect match - apart from the fact she’s vegetarian and he most definitely isn’t. But, to his surprise, he loved her cauliflower steaks recipe and has since been converted; well, on Thursday nights, at least.

Mum’s ‘signature’ Eid chana masala

The result of years of experimentation in the kitchen, this wholesome chickpea curry has become Sabrina’s mum’s signature dish – in fact, the whole family now demand it whenever they come over. It always makes an appearance at Eid, and Sabrina and her siblings have even been known to try and pass it off as their own on other occasions (sorry, guys – your secret’s out).

After nearly 15 years with his partner, Liam, Dan is happy to admit that it’s Liam who is the main chef in the house. Lasagne is a favourite dish for both of them, and this recipe is a lighter, veggie-packed version of the Italian classic which they both love. Liam often cooks it in big batches to keep Dan going when he’s away, so he knows Dan always has an easy, yet delicious meal to hand.
