Sometimes, only a classic will do and so step forward one of France's cool-climate all time classics, Chablis.
This is a fantastic wine, made from 100%
Chardonnay, and is all about the pure lemon and crisp, green apple fruit flavours.
It has an almost cheek-sucking freshness to it, thanks to that northern French climate.
One to bring out when you have seafood on the menu especially, in more decadent moments, oysters.
This wine is ideal for drinking now but can be kept for up to 3 years
Jane MacQuitty - The Times 24/11/2012
Of the 2011 vintage, Jane MacQuitty said: “Ignore the stupid name and grim label and tuck into this rock bottom priced Chablis. Every festive season has one good, ordinary Chablis that could easily pass for a much more glamorous offering from this northern Burgundy outpost: this gets my vote. 2011 is not in the same league as the sleek 2010 Chablis vintage but some perfumed and very pleasing wines have been made, including this elegant, waxy, smoky, nutty wine. Just the ticket with a plate of smoked trout or salmon.”
The monks from the abbey of Pontigny began growing vines in here in the 12th century.
The appellation of the Chablis wine-growing district is located in the area of Yonne, the Chablis vineyards lie along a little river aptly named the Serein. Chablis wines are white wines exclusively made out of Chardonnay. Chablis is the largest of the 4 Chablis appellations, the total surface of this appellation is 4420Ha with a maximum return on 60 Hl / Ha.
