"Full, deep, ruby garnet red in colour, of great intensity, belying its age and showing excellent winemaking and good use of oak.
The nose is almost surprisingly elegant: the aromas are complex, with deeply concentrated red and black fruits, liquorice and dried fruit, combined with a kaleidoscope of fine spices derived from its ageing in French oak.
Honoris de Valdubon is ripe and intense on the palate, warming and refreshing at once, full of soft, velvet tannins.
It is full and long, ripe and deep, showing wonderful potential.
The finish is long, warm, complex and extremely satisfying.
A wine for now but with great future potential."
As with all fine red wine, it is recommended to store Honoris de Valdubon horizontally in a constantly cool environment away from bright light sources.
"Bodegas Valdubon, founded in 1997, is located in the heart of Ribera del Duero, near the town of Milagros. The winery's culture is based on an exhaustive understanding of its vineyards, which allows the winemakers to create personalised wines from any particular plot. Within this culture Honoris was born, as the finest expression of the venerable Tempranillo, Merlot and Cabernet Sauvignon grapes, hand-crafted and lovingly matured. The vineyards from which Honoris originates are all in excess of 60 years old, and are situated in the village of Roa, at the region's heart. The vines selected must be in perfect health; they are green pruned down to just 6 bunches per vine, thereby strictly limiting yields to less than 3,000 kilos per hectare.The maturation of the grapes is meticulously monitored, and they are picked only when each variety is perfectly ripe. Whole bunches are collected in 20kg plastic boxes to ensure that only grapes which are perfectly healthy and ripe are brought to the winery.2005 represents an excellent vintage: a hot, dry summer followed a mild winter and a wet spring, giving exceptional ripening conditions, which produced a very ripe yield. Grapes were harvested in an exceptionally healthy condition, high in sugars and rich in mature tannins and flavour compounds."
