What to do

  • Place the salmon fillet in a small dish suitable for the microwave, cover with clingfilm, and then microwave on high for 1-1½ minutes until fish flakes easily. Cool then break into large flakes.
  • Boil the pasta in lightly salted water for 10 minutes. Then add the frozen soya beans or peas and bring back to the boil. Drain well.
  • Peel and segment the orange. Squash a couple of segments to give you a tablespoon of orange juice. Mix with the crème fraîche, season, and add the chopped herbs.
  • Mix the fish, pasta, spinach and orange segments together and toss lightly with the crème fraîche dressing. Pack into a plastic container and keep chilled until served.

  • 100g-125g (3½-4oz) fillet of salmon or can of salmon (drained)
  • 100g (3½oz) pasta shapes such as conchigliette
  • 75g (3oz) frozen soya beans or peas
  • 1 orange
  • 1tbsp low-fat crème fraîche
  • freshly ground black pepper
  • 1tbsp snipped chives or parsley
  • handful of fresh spinach or watercress

Top tip
If your children don't like salmon use cubes of cheese instead and try swapping spinach for iceberg lettuce
