- 225 g fresh rhubarb, chopped
- 50 g soft unrefined light brown sugar
- 400 g dried fruits mix for example apricots
- apples
- pears
- prunes
- 100 g low fat yoghurt

Method
- Pre heat the oven to 180c/350F/Gas 4. Place the Rhubarb in a saucepan with the sugar and 300ml of water. Simmer for 5 minutes or until the Rhubarb starts to soften.
- Place the dried fruit in an ovenproof dish, add the Rhubarb and it cooking liquid and gently stir.
- Cover the dish and bake for 20 to 25 minutes until the fruit has softened.
- Serve warm or chilled with a dollop of Yoghurt.
