Ingredients

  • 200 g plain flour
  • 1 tbsp baking powder
  • 50 g wholemeal flour
  • 75 g unrefined caster sugar
  • 175 ml semi skimmed milk
  • 1 medium egg, beaten
  • 100 g butter, melted
  • Zest and juice of 1 orange
  • 110 g thick cut marmalade

Method

  1. Pre heat the oven to 200 C/400 F/gas 6. Line a muffin tray with 12 muffin cases.
  2. Sift the plain flour, baking powder and pinch of salt in a bowl. Stir in the wholemeal flour and caster sugar. Beat the milk, egg, melted butter,orange zest and juice together. Add to the flour along with the marmalade.
  3. Spoon the mixture equally into the muffin cases bake for 20 to 25 minutes until well-risen and golden brown. Leave to cool a little, they are best eaten warm.
