- 200 g plain flour
- 1 tbsp baking powder
- 50 g wholemeal flour
- 75 g unrefined caster sugar
- 175 ml semi skimmed milk
- 1 medium egg, beaten
- 100 g butter, melted
- Zest and juice of 1 orange
- 110 g thick cut marmalade

Method
- Pre heat the oven to 200 C/400 F/gas 6. Line a muffin tray with 12 muffin cases.
- Sift the plain flour, baking powder and pinch of salt in a bowl. Stir in the wholemeal flour and caster sugar. Beat the milk, egg, melted butter,orange zest and juice together. Add to the flour along with the marmalade.
- Spoon the mixture equally into the muffin cases bake for 20 to 25 minutes until well-risen and golden brown. Leave to cool a little, they are best eaten warm.
