- Turkey Giblets
- 1 Onion
- 2 Cloves Garlic
- 2 sticks celery
- 2 Carrots
- 5 peppercorns
- 750 ml (1 1/4pts) water
- 25 g 1oz) flour
- 100 ml 3 1/2fl oz) dry Martini/white wine

Method
- Put giblets, vegetables and peppercorns in a pan, add water, cover and simmer for 30 minutes. Strain, discard giblets and vegetables.
- Skim excess fat from cooked turkey pan, sprinkle in the flour and mix until smooth.
- Place pan over medium heat, add stock, mixing constantly.
- Bring to the boil, simmer for 1 minute. Add Martini, return to boil, sieve into small saucepan and keep warm.
