  • Turkey Giblets
  • 1 Onion
  • 2 Cloves Garlic
  • 2 sticks celery
  • 2 Carrots
  • 5 peppercorns
  • 750 ml (1 1/4pts) water
  • 25 g 1oz) flour
  • 100 ml 3 1/2fl oz) dry Martini/white wine

Method

  1. Put giblets, vegetables and peppercorns in a pan, add water, cover and simmer for 30 minutes. Strain, discard giblets and vegetables.
  2. Skim excess fat from cooked turkey pan, sprinkle in the flour and mix until smooth.
  3. Place pan over medium heat, add stock, mixing constantly.
  4. Bring to the boil, simmer for 1 minute. Add Martini, return to boil, sieve into small saucepan and keep warm.
