Scottish smoked salmon makes a great starter, or keep some chilled for easy snacks - its great on toasted sourdough bread topped with eggs.

- 1 side of sliced smoked salmon
- 100 g (3 1/2oz) rocket
- 1 jar avruga caviar
- 1 lemon
- freshly ground black pepper

Method
- Allow 75g (3oz) smoked salmon per person and lay in folds on a plate. Scatter some rocket over, add a spoonful of avruga, a lemon wedge and pepper.
- Serve with brown bread.
