- 2 large bananas, mashed
- 75 g soft brown sugar
- 4 tbsp sunflower oil
- 1 size 3 egg
- 125 ml milk
- 200 g self-raising flour
- ½ tsp nutmeg, grated

Method
- Preheat oven to Gas 5, 190C, 375F.
- Mix mashed bananas together with the sugar and oil.
- Beat in egg and milk.
- Fold in flour and nutmeg.
- Spoon into non-stick muffin tins and bake for 15 - 20 minutes.

As a tasty alternative try swapping the bananas for either blueberries or chunky chocolate chips.
