  • 2 large bananas, mashed
  • 75 g soft brown sugar
  • 4 tbsp sunflower oil
  • 1 size 3 egg
  • 125 ml milk
  • 200 g self-raising flour
  • ½ tsp nutmeg, grated

Method

  1. Preheat oven to Gas 5, 190C, 375F.
  2. Mix mashed bananas together with the sugar and oil.
  3. Beat in egg and milk.
  4. Fold in flour and nutmeg.
  5. Spoon into non-stick muffin tins and bake for 15 - 20 minutes.

Cook's tip

As a tasty alternative try swapping the bananas for either blueberries or chunky chocolate chips.
