Ingredients

  • 400 g (13oz) fresh or frozen cranberries
  • 75 g (3oz) light muscovado sugar
  • 6 juice of 4 clementines, 2 clementines, peeled and segmented
  • 100 g (3½oz) orange flower honey
  • 2 star anise
  • 50 ml (2fl oz) port

Method

  1. Put the cranberries and sugar in a pan, along with the clementine juice and honey. Cook gently for 8-10 minutes until the berries are tender. Taste at this stage and sweeten further if needed.
  2. Add the star anise and port. Bring back to the boil and cook for 1-2 minutes, then remove from the heat and allow to cool a little before stirring in the clementine segments – so they keep their shape.
  3. You can serve straight away, but this sauce is best made in advance and stored in a sealed container to allow the flavours to mellow together.
