  • pinch cumin seeds
  • 2 tbsp extra virgin olive oil
  • 1 red onion
  • 750 g (1½lb) red cabbage, finely shredded
  • 100 g (3½oz) raisins
  • 2 juice of large oranges
  • 4 tbsp balsamic vinegar
  • cracked black pepper

Method

  1. Heat a large wide pan and add the cumin seeds, allowing the flavour to release, before adding the oil and onion. Continue to cook for a few minutes until the onion is softened.
  2. Add the cabbage and combine well. Continue to cook for about 5 minutes.
  3. Add the raisins, orange juice, vinegar, and pepper.
  4. Cover with a tight fitting lid and simmer gently for about 20 minutes, stirring occasionally until the cabbage is cooked but still retains a slight bite.

Cook's tip

For extra sweet cabbage, add 4 or 5 ripe fresh figs or 100g (3½oz) dried chopped figs before simmering.
