Ingredients
- pinch cumin seeds
- 2 tbsp extra virgin olive oil
- 1 red onion
- 750 g (1½lb) red cabbage, finely shredded
- 100 g (3½oz) raisins
- 2 juice of large oranges
- 4 tbsp balsamic vinegar
- cracked black pepper

Method
- Heat a large wide pan and add the cumin seeds, allowing the flavour to release, before adding the oil and onion. Continue to cook for a few minutes until the onion is softened.
- Add the cabbage and combine well. Continue to cook for about 5 minutes.
- Add the raisins, orange juice, vinegar, and pepper.
- Cover with a tight fitting lid and simmer gently for about 20 minutes, stirring occasionally until the cabbage is cooked but still retains a slight bite.
Cook's tip
For extra sweet cabbage, add 4 or 5 ripe fresh figs or 100g (3½oz) dried chopped figs before simmering.
